Lá-Haut was a delightful surprise. We have been aware that the restaurant has a good reputation and is well reflected in the usual guides but that did not fully prepare us for the experience. As frequently state, the restaurant has a wonderful view from the terrace - or through the big panorama window. Lots of windows give the interior a friendly brightness and while the furnishings and decoration are not drawing attention, they are very consistent in style. And this is the very theme of Lá-Haut: not distract but focus on what is truly important. Today's "fine dining", the "Haute Cusine" strives to be a cultural event: to entertain, to push boundaries, to transcend the moment. This is frequently delightful but it is diluting the simple pleasure to have wonderful food and drink with the people you value. When we ate asparagus with sauce Béarnaise and a pork Tagliata it was exactly that, nicely decorated but not frills - yet it was perfect on an almost sensational level: this is how asparagus should taste and melt in your mouth, and each of the pork slices (and more!) sends you down memory lane trying to recall when you last ate pork so flavorful. Two glasses of wine from the neighbors in Chardonne accompanying your dinner - not the long-winded story of a "perfect selection form the best of the best" but something that simply made you feel at home. An incredible joyful dinner, focused on the essentials and executed with top-level skill and craftsmanship. All this supported by an always attentive and never distracting service or even intrusive.
