The chopping boards and pinses at Wine in Progress are of an absolutely excellent standard! I can safely say, without fear of being contradicted, that by eating from them you perceive the deepest and most authentic nuance of the Italian tradition. Personally, I had the following dishes and was not disappointed: Mixed platter ("Villani" truffle cooked ham, "Villani" raw ham and salami, "La Santo" Bologna mortadella, selection of aged pecorino cheeses, truffle cheeses, "pure pork" croutons with sausage from the "Da Stefano" butcher's shop ( Laccio), IGP stracciatella shortcrust pastry and EVO oil, combined jams); Pinsa “Rita” (peeled “Celestina” tomatoes, fior di latte DOP mozzarella, basil, EVO oil); Pinsa “La Bufala” (peeled “Celestina” tomatoes, DOP Campania buffalo mozzarella, basil, EVO oil); The "Mixed" chopping board is super! Rarely have I eaten products of this quality in Genoa, but above all so fresh. Belin, it seemed to me that they had brought them 10 minutes before my arrival at their establishment (from stall to my plate in no time at all!). The flavor and taste presented themselves on the palate in a pleasant way, in fact they went down like a pleasure! One led to the other! The cured meats are excellent, the ones with truffles are divine! Even the truffle cheese is stratospheric! And if you want to unite your forks in the supreme ecstasy that belongs to the idyll of "magnare", then combine them with their jams (AMEN ). I really enjoyed eating their platter. It brought back my soul of "magnone" and my culinary philosophical thought around Italy (from Liguria to Campania, passing through Tuscany), lands that I adore and that I miss very much (except Liguria, as I live there and "great" here almost every day of my life). As for the pinse, I must say that I found the dough excellent: it was well mixed (thanks to a perfect use of flour). The degree of cooking left nothing to complain about (crunchy at the right point). Basically, the pinse were very fragrant and tasty on the palate. Furthermore, in this place they do not skimp on the filling, in fact it is very generous and the ingredients are absolutely fresh and of excellent quality. I paired it all with an excellent bottle of Ciliegiolo IGT 2021 “Colli di Luni” (Cantine Lunae). It is a fresh and pleasant red wine that comes to life, precisely, from the 100% Ciliegiolo vine (and you can feel it!). It has a ruby red color and an elegant nose, with notes of red fruits and sensations of Mediterranean scrub. On the palate it is harmonious, soft, fruity and floral. It has a long, pleasant finish that prolongs the pleasure of drinking for several seconds. In case, however, you want to level up or taste some excellent Italian alternative, then I recommend you to buy any bottle from their wine list, because you certainly won't go wrong with the choice. I would stick to Ligurian wines, but how can you not drink the others too. I withdraw what I just wrote try them all and Italy is safe! Incidentally: on the list they also have some very good craft beer that comes from Tuscany. The prices are not modest, but overall they are affordable. As for the wine list and the relative prices, know that Wine in Progress offers you a good margin of choice, as the price range of the individual labels is very wide. It should be emphasized that the service is attentive and, above all, quick. No long waits for your mouth and stomach. The restaurant is very nice, the decor is modern and thematic (In vino veritas!). It seemed very real and authentic to me. Furthermore, it is large and bright, but above all it is very clean. I remind you that for the complete review of this place (including the photo gallery), you can visit my website (the address can be found in my profile).
