Bella scoperta, finalmente una cucina cinese autentica e di valore. Menù davvero interessante con piatti della tradizione realizzati veramente al top. Abbiamo provato la degustazione di dim sum, un'esplosione di sapori a cui non siamo abituati mangiando nei comuni ristoranti cinesi. It should be obvious but I want to premise it for the avoidance of doubt. This review comes from a personal opinion, an opinion that is formed on the basis of past experiences in many places, precisely because of the passion I have for this type of cuisine. Based on this, I judge the Song Dimsum restaurant as one of the best where to enjoy one of the widest and most articulated proposals of Chinese dumplings. The tasting menu allows you to have an almost complete overview of the skill with which these small caskets of pasta are stuffed, top quality ingredients, expertly chosen and embellished by the masterful use of many spices. The menu is served in an increasing sequence of flavours, from the most delicate to the most intense, without however ever exceeding the thresholds of moderation, even in the spicy declination. In all the tastings a circularity of flavors is perceived where all, in sequence, arrive on the palate in a distinct way and then return to the most persistent element of the composition only at the end. In addition, because outside the tasting menu, I recommend trying the Wagyu bao, distinguished by the lightness of a cloud and the spectacular flavor of the meat, and the Redfish ravioli to be tasted before the bao. The lacquered duck is excellent even if I have to say that the complexity and harmony of the ravioli doesn't leave much room for how good it can be. Finally, let's talk about the venue and the price. It is an elegant place with impeccable service and with high quality food and great craftsmanship, the ravioli are handmade and it shows.
