The expectations we had by Michelin, were not met by Nida. Made a reservation and deposited on our credit card €100. Confirmed without mentioning it was for seating at the bar. It was not an option in the reservation process. Disappointment. The menu is elaborate. Because of not knowing the chef's style of cooking we ordered 'a la carte'. In hindsight a smart choice. Choosing a wine we came across a grape variety we don't know: famoso from Ravenna. So we asked the sommelier to describe it: very aromatic like a gewürztraminer. That was what we were looking for an aromatic wine. It was served very cold straight from a fridge around 5 degrees, had hardly a nose and almost tasteless, very dry. So we let it air and acclimatize. A bit more nose and still very dry with hardly an aftertaste. Definitely not aromatic. And since we doubted our tastebuds we checked a wine app and it confirmed our tastebuds. Disappointment no. 2 The food: tempura of scallops with a somewhat spicy sauce was good and tasty. The plate of mixed nigiri looked wonderful, but all of the fish from scallops to tuna was a bit blend, not the exquisite taste of raw fish we know from numerous Japanese restaurants. The kakuni pork belly was a great looking and tasting dish. The salty, sweet, spicy and sour all met in this fantastic dish. The second dish we ordered, the fish in butter and soup, was served with lovely bonito flakes on top. Always fun to see them move and it adds some taste. This dish was very bland and definitely needed a lot more umami. Halfway through the dish I felt a bit nauseous. I told the sommelier the dish needed more umami and she replied that it was more a European dish.... Disappointment no. 3. And that is the problem with this restaurant, it needs a much smaller menu so the chef can concentrate at a selection of Japanese food and execute it flawless and great. Instead of a lot of choice of mediocre dishes. We were both very happy for not ordering the chef’s menu!!! Service: Dine in Meal type: Dinner Price per person: €60–70 Food: 3 Service: 3 Atmosphere: 3
