Easily the worst michelin star restaurant from all the ones I’ve tried in Croatia. Service was a far cry from what you’d expect at any michelin star restaurant. Despite having mutiple servers we had to top off the wine and water ourselves. The amuse-bouche was bland. The wagyu with truffle was overly salty. The dessert was underwhelming. Main course was the only standout of the meal. Edit: What disappointed me even more was the response to my review. Rather than addressing the service issues I raised, the owner chose to be defensive and attribute my experience to “personal taste.” While flavor is subjective, inattentive service and a willingness to dismiss guest feedback are not. A Michelin-starred restaurant should welcome criticism with humility, not deflect it by suggesting the diner’s palate is the problem. Food: 1 Service: 1 Atmosphere: 2

That is exactly what I have tried to cultivate over the past decade, creating over 200 dishes and protecting our Michelin star for seven years. Culinary preferences are deeply personal. While my team and I pour our hearts into ensuring every dish is executed to the highest objective standard, I completely respect that flavour profiles land differently on every palate. Having dined at a range of Michelin-starred and highly regarded restaurants across Italy, France, Spain, the UK, Croatia, Japan, the Philippines, Hong Kong, the US, and Thailand — including Enoteca Pinchiorri, Arzak, Malena, Michel Sarran, Epicure, Ambassadors Clubhouse, PY-R, Krug, Udatsu Sushi, Subin, Gallery by Chele, T’ang Court, Saint-Germain, and Paste — I feel my family and I have had broad exposure to different cuisines, techniques, and flavour profiles. I mention this not to unfairly compare restaurants, but to give context that we approached the meal with an open mind. Because of this, I found it disappointing when the restaurant responded to criticism by suggesting that the food may simply “not be for everyone’s palate.” In my view, the issue was not unfamiliar flavours or a challenging concept, but rather the execution, balance, and combination of flavours in the dishes. Unfortunately, the food felt mediocre at best. I also felt it was unfair and unprofessional to imply that my family’s palate was the issue, as it seemed to dismiss genuine feedback rather than address it constructively. Beyond the food, the service could have been handled better. It was raining during our visit, and I asked multiple times whether it would be possible to move indoors. I understand this may not always be possible, but a clear acknowledgment would have been appreciated. Instead, we were told they would try, but no one followed up during a meal that lasted over two hours. This was especially concerning for me as I do not have the strongest immune system, am prone to getting sick from weather changes, and have been hospitalized multiple times before. Overall, I came in wanting to enjoy the experience, but both the food and the way our concerns were handled left us disappointed. I believe feedback should be received professionally, rather than being dismissed as simply a matter of palate. Food: 1 Service: 2 Atmosphere: 2
