We are only sorry that you did not express these observations in person that evening when we asked you how your experience with us had gone because we like to discuss things in person having the opportunity to apologize for waiting for the drinks (a more than fair observation from yours) but our sommelier was busy transcribing the order of your large table with all the necessary variations and all the staff were busy accommodating the other guests who unfortunately all arrived at the same time. Regarding the timing of the arrival of the dishes, again, the number of diners at your table, the different courses ordered and having a team in the kitchen made up of two chefs can cause slight slowdowns in the delivery of the dishes as our dishes are very carefully prepared and enriched with decorations which obviously require time to create. It is our habit to gradually bring the ready dishes to the table and not wait until all 11 dishes are still on the table, also to guarantee their heat, but this can clearly give the guest the perception of too much waiting between one and the other. We will certainly think about how to improve this aspect on the occasion of larger tables and we thank you again for your constructive comments.
