There are places where food suffers real humiliation. Places where the raw material is mortified, sacrificing taste and genuine flavour. In these places, appearance matters more than substance. Gusto is one of those places that nowadays are defined as "INSTAGRAMMABLE" and where the dish must be beautiful for... photography (exact words used by a person who is part of the circle of the 2 owners. After being hired as Head Chef by the Gusto restaurant, after saving a birthday party for 18 people, 12 customers in dribs and drabs, without even knowing a single dish on the menu, I am told that I am not up to their "expectations". A place from which 5, and I underline 5 chefs have literally escaped, has some serious problems. My test was requested after an evening service without me having time to set up a line. The shopping done was 2/3 wrong and, therefore, I had to completely readjust the dishes I had in mind to make. Accused of having prepared, in a cheap and disappointing way, a fillet with berry coulis on sweet Gorgonzola cream and toasted cashews, a perfectly successful dish from my point of view, but not appreciated by the owners (the customer should decide... .). Gusto is a restaurant that does not know how to use dried pasta and has a unique element on the menu: meat. It is prepared, in the a la carte menu, with highly unlikely combinations such as Chinese-Thai cuisine and Oriental/Asian cuisine in general. A very low quality gourmet like the literally destroyed carbonara (pecorino foam, clotted bacon, pepper and a fried egg yolk). But let's get to the focal point: Do you want to understand how the splendid meat that you will see placed in the refrigerated case on the right once you enter is cooked? Order a steak, I suggest the cheapest one, then make yourself comfortable and observe through the semi-circular glass which is on the left once you enter the restaurant. Also witness the conditions in which the steak is "cut" and above all observe the profound hygiene of the counter on which those in the kitchen, through no fault of their own, are forced to work. The grandstanding made by the owners about the undoubted quality of the meat they order, miserably falls apart when the latter is martyred. There is no more appropriate term as the slice of meat is literally pan-fried in its own fat and then placed in the oven. Subsequently, since it is totally impossible to cook, with the aforementioned methods, 3 or 4 fingers of thickness of meat uniformly and serve it hot to the core, the steak is placed back in the oven so that it can be reheated. I lived in Brazil for 5 years and I'm Mestre Assador...just to point out. A note: they have a charcoal grill but they don't light it because it's hot in the kitchen (totally not up to standard). I can boast of goals achieved in a 30-year career that few chefs have achieved, obviously excluding the few starred chefs who are truly worthy. "Electio et iudicium tuum sunt", Tacitus would say.
