What to say...! I don't call Filippo a chef.... For me he is the Master... This evening with a simple fish aperitif he delighted us with a simply, exaggeratedly delicious dish... Exaggerated tuna tartare with citrus fruits then swordfish with celery and very good pink sauce then very good octopus carpaccio steamed prawns with pink sauce a very good sauce with goat cheese all accompanied by its amazing 7-grain focaccia that you can eat and eat again... If you then taste his milk cream risotto with prawns flavored with truffles, you will start calling him MARSTRO too..
