Tucked away in the serene alpine heights of Obersaxen, Vanis is a masterclass in unexpected culinary brilliance. Finding a Thai restaurant with this level of sophistication in such a secluded setting is a rare delight, making it entirely clear why this establishment commands such respect. The dining experience here leans into spontaneity, trust, and remarkable value. Instead of a sprawling à la carte selection, the chef curates a daily set menu—priced very reasonably at CHF 44 per person—dictated entirely by the freshest ingredients available that morning. The meal opened with a vibrant, refreshing appetizer: a clever interpretation of Som Tum utilizing thin, somen-style noodles and crisp cabbage. The bright acidity and subtle heat evoked the elegant simplicity of a high-quality Korean cold spicy noodle dish. The main courses, a deeply aromatic chicken curry alongside a flawlessly fresh beef dish, showcased a kitchen that understands how to build profound, layered flavor profiles without relying on heavy-handedness. The beverage program is curated with an observant eye. The house aperitif (CHF 11.50) was a bright, refreshing mix of white port and tonic, while the classic Italian Crodino (CHF 4.00) served over ice delivered a fascinatingly complex, botanical bite that perfectly primed the palate. Later, non-alcoholic 'Sonnwendig' beers (CHF 6.00 each) provided a subtle, honeyed finish that harmonized beautifully with the aromatic Thai spices. What truly elevates Vanis from a great restaurant to an exceptional destination, however, is their dessert program. They treat their homemade ice cream ("Glacé") not as an afterthought, but as a standalone artisanal craft. The quality is so remarkably high that it easily rivals a boutique Italian gelateria. They proudly stock a dedicated freezer full of beautifully branded, house-made pints, and even operate a mobile ice cream cart ("Glacewagen") that travels to local markets and wine festivals throughout the summer. Our two scoops of ice cream (CHF 4.50 each) provided an elegantly smooth, nuanced conclusion to the evening. Dining on the outdoor terrace, surrounded by blooming flowers, elevated the entire evening. The service was intuitive yet unobtrusive, with staff quietly adjusting our parasols to track the shifting mountain sun. Practicalities are also handled with grace: an expansive free parking lot equipped with EV chargers sits right out front, and the restrooms feature a touch of rustic charm, marked playfully with painted chickens. For those seeking an elevated, thoughtfully executed dining experience seamlessly integrated into a beautiful natural setting, Vanis is an absolute must-visit.
