Food can trigger many things. Joy, desire, frustration, enthusiasm. And very, very rarely do you end up in a place that you will never forget for the rest of your life. That's exactly what happened to us at UniQuisine. Let's see if we can do justice to this incredible experience with words. About the location: You take an elevator in an apartment building and land in an apartment. Inside you are warmly greeted by the chef and waiter and take a seat at a table with a view of the kitchen. It's unusual but extremely relaxed. We can choose between a 5 and 7 course menu and choose the latter. The amuse bouches are already great. The Sbrinz sablé with onion cream and the foie gras with walnut oil stand out and provide the first taste explosions. The third amuse-bouche (beef tartare, tomato consommé and “caprese salad”) is a revelation. The “salad” consists of a basil sorbet, a warm tomato compote and a burrata foam. There was a lot more in it, but our brain stopped there for a few minutes. We've been at the table for almost 30 minutes. We ate 6 incredible amuse-bouches. Nothing from the menu has been served yet. Surprising, generous and above all, damn tasty so far. The menu has everything a gourmet could wish for; Variety, freshness, surprises and endless love and passion for what ends up on your plate. We would like to highlight two courses: The scallop with celery, black truffle and foie gras snow is one of the best things we have ever tasted. Everything melts in your mouth. The aromas are subtle yet intense. The sideboard is sensational. But the atmosphere is still deeply relaxed. The only thing used is culinary. The waiter is still charming and the chef is attentive to the guests but still engrossed in his work. The rabbit with raw hay ham, carrot, parsley oil, mustard seeds and the best mashed potatoes in our lives puts a big grin on our faces until the last bite. But all the other corridors are also monumental. We can only warmly recommend that the reader of this review find out for themselves. And, never forget: two cool socks are obviously enough. Two warm people who are bursting with creativity and passion serve their guests everything their hearts desire. For two (!!!!). It's laughable that this place only has one star. But the owners don't give the impression that they're cooking for awards. But for the love of cooking and for the well-being of their guests. You can feel, taste, smell and feel it. We have never had at least three classics (caprese, mashed potatoes, scallops) served better in our lives. Thank you for that, we will never forget these dishes.
