The cake was booked about a month before the event, and since it was an unconventional cake (two tiers, butter cream, fresh flowers and sugar pearls of multiple sizes) I moved immediately to find the supports and decorations necessary for the realization of the same. The fact is that, fortunately for me, my pastry shop receives the approval of many customers, and over the following month, another 10 cakes of considerable size were added to the reservation for that same day. When, two weeks before your event, you decided to CHANGE the finish of the cake, wanting it to have THREE tiers instead of two as initially established, I limited myself to telling you that, given the amount of work that had been added in the meantime, I could have done so to the creation of the same with two floors (as originally established), not having materially the space to accommodate a 3-level cake (which was not foreseen and which you decided to modify in times no longer compatible with the rest of the work). I wonder where my lack of seriousness lies. The fact that I sent my "collaborator" to tell you everything shows that you have no idea what a 360° entirely artisanal pastry production represents. My "collaborator" (as you define her) is responsible for my relations with the public, as I am constantly busy in the laboratory doing what is MY job, that is, the pastry chef. I rightly believe that I have not sinned by lack of seriousness towards you: the cake had been booked in two tiers, and I would have made THAT. Changing it after a month with, in the meantime, many reservations added to yours, it would not have been possible for me, and I have communicated this to you. The numbers prove that the "lack of seriousness" is not about me, and it won't be a negative review that will convince the world of it. It is all too easy to write a few lines and think in this way of denigrating the commitment and sacrifice of a human being, who in his own small way, within his very small laboratory, works incessantly 18 hours a day to prove, within the limits of own possibilities, to welcome and satisfy any POSSIBLE request, which in fact was not yours.
