We apologize for having left out this detail but we would like to point out that when the girl served you the vegetarian maki, she asked you if it was okay, a question to which you answered yes. If only you had requested differently, we would have immediately brought you what you wanted. Our vegetarian ramen is absolutely not made of meat broth (since the menu also has the choice between meat and fish ramen, the broth is always cooked from scratch, including the vegetarian one) and yes, the beef also has cartilage , a normal aspect of stewed meat and which does not delimit the quality of the meat.
