Excellent cuisine with a lack of balance around it We would like to say in advance: Basically, we enjoyed a wonderful evening at Talvo with exquisite food and excellent wines. We criticize 2 points: We were greeted by a service employee who didn't speak a word of German (we're in Champfèr in Switzerland...), only harsh English and Italian, which is why the greeting came to a halt. We were then bid farewell by a German-speaking employee; However, we would have expected that the manager of the house, Mr. Dalsass, who was present in the restaurant, would have shaken our hands, as is actually usual in such restaurants. We have to warn against stopping here after a day on the Engadin ski slopes; Only those who have spent the day in a deck chair are well advised to use the Talvo. The portions in the gourmet menu are extremely small: in the starter, for example, two small fork tips of deliciously prepared Belfego tuna tartar, in the main course with wild duck in honey, then a single postage stamp-sized corn galette; We think: 3 pieces could have been presented beautifully. Anyone who has actively spent the day in the snow will definitely not feel full in the Talvo. As people in our mid-seventies (with only a small appetite), it is already clear to us that star restaurants only work with small portions in the multi-course menus, also for sustainability reasons and to avoid food waste. But how does this reconcile with the frog legs offered as the daily special? A responsible Swiss gourmet kitchen really shouldn't offer this anymore; Even the majority of international customers will be surprised...
