Restaurant Stuben is located adjacent to a Michelin-starred venue and offers a unique dining experience within the hotel, available to half-board guests. Seating is assigned based on your room category, and the restaurant is divided into five distinct areas, each with its own character and ambiance. The first section features bold red tiles, silver wallpaper, and striking gold lamps. The second resembles a traditional alpine ski chalet, with warm wood accents. We were seated in the third section, which had wood-paneled walls and a carved wooden ceiling, accented by black metal lampshades. The banquette seating was upholstered in a brown herringbone fabric, with chair backs decorated with black-and-white mountain imagery. The largest area of the restaurant is sleek and modern, with floor-to-ceiling windows and a ceiling that opens up to natural light. It’s located next to the indoor swimming pool, though discreetly partitioned off. The dining format is a well-structured four-course meal: appetiser, primi, main course, and dessert. After placing your order, you can visit the excellent salad buffet. A cheese course is offered between the main and dessert, followed by a selection of ice creams. Salad Buffet An impressive variety, featuring chicory, anchovies, prawns, assorted salad leaves, and an array of dressings and condiments. A strong start. Tasting Menu – July 31, 2025 Appetisers: • Sturgeon Fillet – Marinated with dill, peach, avocado, and Philadelphia cheese. Light and fresh, reminiscent of ceviche but without excess liquid. • Pigeon Breast – Roasted with rosemary, served with fava beans, apricot, and polenta. Slightly heavier with a mild gamey undertone. Primi: • Carnaroli Risotto – Green from mint pesto, accompanied by scallop and grilled aubergine. Well-balanced and satisfying. • Egg Tagliatelle – Served with minced rabbit, pioppini mushrooms, and Pecorino di Fossa cheese. Flavorful and well-balanced, the rabbit was tender without being fatty or overly gamey. Main Courses: • Poached Shi Drum – Served with pea cream and soy sprouts. Slightly dry, but the flavors were smooth and well-integrated. • Veal Fillet – Cooked medium rare, paired with a vegetable salad and potato croquettes. Nicely prepared and tender. Desserts: • Apple Strudel – A bit underwhelming and lacking in impact. • Ricotta Sphere – With chocolate and pear; a standout dessert with rich and satisfying flavors. Ice Cream Selection: The pistachio and Dubai chocolate flavors were both excellent. Overall Impression The service was attentive, and the wine list was extensive. Restaurant Stuben combines a thoughtfully curated menu with varied and visually interesting spaces. While some dishes outshone others, the overall experience was enjoyable and memorable.
