Your suggestion about a lock for larger packages (500 g and above) is very helpful, and we will take it into consideration. Regarding the roast level, we are sorry it did not meet your expectations. The coffee you received is our Iglesia, a rare single-parcel coffee from Chiapas, Mexico. It is carefully grown and processed to highlight the unique flavors from its variety, terroir, microclimate, and altitude. While our website lists it as a medium to light roast, the beans may appear slightly darker due to the natural characteristics of the variety and micro-lot. We also tasted this batch again and agree that a slightly lighter roast could be considered – we truly appreciate your feedback. Iglesia is known for its balanced, slightly bitter flavor. In filter coffee, some bitterness can appear, which is normal for this type of coffee. We hope this helps explain its flavor and origin.
