Several of my foodie friends from South Tyrol in Italy had spoken very highly of this new restaurant near Bolzano, PRAMOL ALTO, praising both its unique cuisine and its stunning mountain setting. When I learned that the restaurant, run by Ethel Hoon and Jacob Zeller, had been named South Tyrol's best new restaurant of 2026, I promised myself I would visit it on my next trip to Northern Italy. Here we are. First impression: Wow! I wasn't expecting this. An incredible view of the city of Bolzano, both day and night, with the Dolomites as a natural backdrop. In summer, you can eat on the terrace, and in winter, in the veranda, to enjoy this magnificent view with the added bonus of an unforgettable delight of colors on a clear day. But we came here first and foremost to eat well, and we weren't disappointed. There's a four-course set menu for €95, to which you can add a fifth course for €15, usually fish, which was artic char that evening. We start with three appetizers consisting of beetroot tartare on a celery chip, a slightly spicy persimmon sauce in which we dip a « wonton » (chinese ravioli) filled with carrot and artic char, and finally a turnip coated with japanese chili pepper. They hit the spot because these ingredients, which are unfortunately underused in cooking, are absolutely delicious. To remind us that we are indeed in Italy, tortellini (homemade by hand) in a broth flavored with Sicilian citrus served as the first course. Here we encounter something new...and it works. A real treat. My table neighbor described it as “amazing.” We are still in Italy, but more specifically in South Tyrol, hence the presence of this surprising grilled cabbage with sake-flavored sabayon, winter vegetables with quince and hazelnuts, sourdough bread, speck, and pickles. A creative treat from Tyrol with love. Around us stretches a landscape of lakes and rivers. No wonder, then, that we are offered arctic char, a little-known fish from Alpine lakes with tender, slightly sweet flesh that is less fatty than its cousins trout and salmon. Prepared with chili jam and fermented soy sauce, this dish is very light while retaining a most refined taste. What followed was an explosion of the senses. I particularly enjoyed the duck, which, after a few seconds in the mouth, literally melted on the tongue while releasing a range of surprising flavors, demonstrating true culinary expertise. It was a great gastronomic moment. The meal ended with an 80% chocolate soufflé that had the three essential qualities for success: a light crust, a melt-in-the-mouth mousse, and a soft, gooey center, all accompanied by a plum nectar. It was served with a woodruff fruit ice cream, which had a vanilla flavor. This dessert was a real delight. And if it's your lucky day, you may taste the best apple strudel in all of South Tyrol, a recipe from Jacob Zeller's grandmother. This restaurant has subtly interpreted the local produce of the South Tyrol Alps, adding a touch of creativity with Asian flavors brought back from trips to the Far East. Add to that, impeccable service and an excellent selection of natural and organic wines, and you have a moment of culinary bliss in an enchanting setting.
