Servizio lentissimo, tante dimenticanze nella comanda, eravamo praticamente unico tavolo al ristorante. Potevo tranquillamente farmi un bagno al mare, asciugarmi, tornare al ristorante e comunque non trovare ancora il piatto e la birra in tavola! Mancano le foto del cono di fritti, l’abbiamo finito troppo in fretta! La cura ai dettagli rende il Maca un posto speciale in cui torniamo almeno una volta l’anno. Abbiamo preferito i piatti a base vegetale e di pesce, provando le alici fritte alla menta come piatto del giorno. Che freschezza! Ci vediamo alla prossima. There are places that feed the body, and then there are places that whisper to the soul. Maca Bistrot belongs to this second, rare category. Here in Vibo Marina, cooking is not merely preparation, but poetry written with ingredients. Our dinner was a symphony of flavors, orchestrated with moving elegance. The Linguine with burrata, pistachio, and guanciale arrived like a warm embrace: a sublime contrast between the milky sweetness, the savory crunch of the guanciale, and the roasted note of the pistachio. A dish that lingers in the heart. The Entrecôte, served with its potatoes, was pure silk: meat of supreme quality that melted on the palate like a happy memory. Every course was a verse in this composition: the Tempura shrimp with fritter, light and ethereal as a golden cloud; the sautéed chicory and the escarole with breadcrumbs ('scarola ammollicata'), which elevated the roots of our land to a level of absolute refinement. But every great masterpiece needs a conductor, and at Maca Bistrot, that conductor is Marta. With her graceful and attentive presence in the dining room, she transformed the service into a dance. She was the light that made the atmosphere vibrant and the hospitality unforgettable—the true muse of a perfect gastronomic experience. Absolute enchantment.
