Completely overrated restaurant with poor value for money I was quite curious to try this Japanese-Peruvian fusion restaurant, as I enjoy both cuisines. For this reason, we opted for the long Omakase Cuzco-Hokkaido tasting menu at 180 CHF per person. While the price seemed steep, we were willing to pay for creative cuisine based on high-quality ingredients—especially exceptional fish, given the menu price. Spoiler alert: this was far from the case. First course: sashimi. I had expected cuts of premium fish, but instead we were served the same uninspired sashimi you can get at any low-end Japanese restaurant: salmon and tuna (at least they added a few pieces of beef sashimi to make it slightly less basic). The salmon looked and tasted like mediocre farmed fish, and the tuna was a lean, low-quality cut rather than the fatty, premium cuts (like chu-toro or o-toro) one would expect. The only notable element was the surprisingly original Japanese wasabi. In my opinion, it would be better to skip gimmicks like serving sashimi in a hydrogen cloud for Instagram and focus on quality ingredients instead. Second course: cucumber salad with mushrooms, sesame, and soy marinade. Seriously? I’m paying 180 CHF for a tasting menu to be served an ordinary cucumber salad that a child could prepare? Outrageous. Third course: ceviche, one of the flagship dishes of Peruvian cuisine. Again, we hoped to see culinary skill showcased with a high-quality fish (sea bass, corvina, grouper). Instead, we were disappointed by a ceviche made with low-quality salmon. It’s sad to see such a signature dish treated so poorly. Fourth course: miso soup. Yes, you read that correctly—an ordinary miso soup, identical to what you’d get at a low-end neighborhood Japanese restaurant (albeit considerably more expensive). Another “culinary innovation” from La Muña. Pathetic. Fifth course (by far the worst): deep-fried shrimp with mayonnaise. A greasy, unpleasant culinary aberration—an insult to Japanese cuisine. La Muña audaciously calls this “tempura shrimp,” but anyone who’s tried real tempura would recognize the tiny, low-quality shrimp buried under a thick, greasy batter and topped with mayonnaise. Absolutely nothing like authentic Japanese tempura. Sixth course: beignets topped with the ubiquitous low-quality salmon they use in almost every dish. Again, a greasy, mediocre plate unworthy of a 180 CHF tasting menu. Seventh course: glazed black cod. This dish wasn’t bad; the fish was tender, and the glaze well-executed. However, once again, they opted for a cheap fish rather than a premium product for their “gourmet” menu. Eighth course: beef tataki. This was quite good. The meat was flavorful, tender, and clearly higher quality than the previous dishes. Dessert: a sort of kiwi tartare with ice cream, meringue, and citrus notes. This was genuinely enjoyable—the combination of textures, temperatures, and the balance between the meringue’s sweetness and the fruit’s aromatic acidity worked very well. This was probably the dish that showed the greatest culinary creativity. The restaurant is located in a spacious, attractive room at the Adula Hotel. However, the lighting is excessively dim, making it very difficult to appreciate the presentation of the dishes—a major flaw for a supposedly fine-dining experience. How can one enjoy a full sensory experience when it’s hard to see what’s on the plate? The service, on the other hand, was professional and competent. In my opinion, paying over 500 CHF for this pseudo-gourmet experience, only to be served cheap, poorly prepared fish, feels deeply dishonest and a serious misuse of the customer’s trust. In short, I would not recommend La Muña to anyone who appreciates authentic Japanese or Peruvian cuisine—or anyone who values their money. Price per person: CHF 100+ Food: 2 Service: 4 Atmosphere: 2
