Dear Emanuele, Thank you for your feedback and for being a loyal guest over the past years. We truly appreciate your regular visits. We completely understand that price adjustments can feel frustrating. However, our recent increase of CHF 1–2 per menu was the first in several years, despite significantly rising costs since 2020. For example, the price of Swiss organic beef has climbed by 50% – 120%, and rent and utilities have increased by similar margins. Since we started in 2019, we’ve raised our prices by only about 10–15% in total, even though many of our input costs have doubled or more. Even with the new prices, our margins remain far lower than before, and we continue to focus on offering genuine value. Such as dishes prepared with 150 g of premium Swiss organic beef for CHF 22, which is hard to find elsewhere.
