Pizza davvero spettacolare, ottimo l’impasto e facile da digerire, probabilmente grazie all’utilizzo del lievito madre. Anche gli ingredienti sono di ottima qualità. Ambiente confortevole e location moderna e ben arredata. Molto buona anche la loro birra artigianale ma per un ottimo finale consiglio i loro cantucci. We stumbled upon Pizzeria Fibo thanks to an Englishman we met on our journey along the Way of St. Francis. And wow, what a recommendation! The pizzas here are nothing short of divine. Made with sourdough, the crust has that perfect balance of crispiness and chewiness, full of deep, rich flavors. Every bite is a revelation – the kind that makes your mouth water all over again before you've even finished chewing. If you're anywhere near this place, do yourself a favor and stop by. Fibo offers an authentic sourdough pizza in a modern oven. The flour is a bio and traditionally stone grinded. The final result is a very light pizza which is easily digestible. Each ingredient and technique has selected by care. You can find classic pizzas as well as creative ones (like mortadella with Sichuan peppercorns).
