Unica pecca: locale molto affollato e, quindi, troppo rumoroso.

In view of the end of my stay here in Massafra, my aunt and my cousin decided to let me try the gourmet pizzas of Fabrì Concept Pizza. So yesterday evening, intrigued not only by the various positive reviews on the web but also by the pleasant experience made by my family, I gladly accepted their invitation to dinner. The restaurant is truly delightful with modern-style furnishings and an outdoor terrace that offers a view of the marvelous dome of the church of San Lorenzo. What I most appreciated were the availability and customer care shown by the owner and dining room staff: since the evening was windy, I asked if it was possible to dine inside, making sure, however, that I was well away from the air conditioner. Unfortunately after a few minutes we realized that the flow of cold air still reached our table. To remedy the problem, after first trying to regulate the temperature, they didn't hesitate to move us outside where it was less cold. Furthermore, when ordering, they accepted without batting an eye the changes requested to one of the pizzas I wanted to taste. The only drawback to the almost impeccable service were the almost biblical waiting times. What left me perplexed was not so much the fact that the pizzas arrived at the table an hour after our arrival (considering that they also do take-away service and that the place was full, it can happen that the times get longer) as much as the fact that it was quite a while before we were asked what we wanted to drink. Coming to the culinary proposals, a strong point of this pizzeria is certainly the wide assortment of pizzas to choose from. Carefully evaluated the menu, I decided to order half "Caramellata" with smoked provola from Agerola, caramelized Tropea onion and Sicilian black pork speck and half "Valle d'Itria" (revisited according to my taste) with zucchini cream, fiordilatte from Agerola, zucchini flowers and, added on the way out, red Corbara tomatoes, a sprinkling of km0 cacioricotta and capocollo from Martina Franca. To tell the truth, they had forgotten about this last ingredient but, having noticed the lack, they promptly brought a saucer with this delicious salami to the table so that it could be added to the pizza. To while away the wait I also had the fried zucchini flowers stuffed with ricotta cheese: I found them pleasant and the frying not particularly greasy. The pizzas, among the best eaten in the area, were really tasty: the dough is soft and light like that of the typical Neapolitan pizza, tasty without being salty and the toppings are prepared with expertly combined excellent quality raw materials. I just would have preferred the mozzarella to have been more stringy and not as compact as you can also see in the photo that I leave you. The bill, an aspect not to be overlooked, is in line with the quality of the product and the service offered. Considering this overall positive experience, I can only recommend Fabrì Concept Pizza to those who are in the area and want to enjoy a good pizza prepared with genuine ingredients.
