Che piacevole sorpresa ,trovare nel primo entroterra del Karso ,questo piccolo ristorante,dove lo Chef Shin Sato,offre la sua cucina giapponese. Menzione particolare,al ramen ,alla tempura, alla spuma d'uovo con capasanta. Carta dei vini essenziale , con riguardo ai produttori locali , principalmente naturali, e infatti abbiamo scelto una malvasia di Uou e un blend di Krapaz , entrambi ottimi. I was looking for mistakes, but I couldn’t find any… Just 15 minutes away from my home – an outstanding Japanese restaurant with a touch of French cuisine. Wow I recently heard about the Japanese restaurant Camut in Kazlje near Sežana, but I had some doubts about what to expect. After my first visit yesterday, those doubts were more than unnecessary. The restaurant is set in a charming environment of a renovated old Karst house, which gives a special touch and soul to the entire space. The menu is a tasting menu, completely left to the creative hands of Chef Shin Sato. You don’t know what to expect, but that’s part of the magic of the experience. The menu consists of eight rich dishes that combine Japanese and French cuisine, and there’s also a little greeting dish. The dishes are exceptionally rich, carefully prepared, with combinations of different flavors and mini dips. We started with a warm greeting dish of Japanese legumes, followed by various warm and cold appetizers, two warm main courses, and dessert. Most of the dishes combine vegetables and meat (mostly fish and chicken), as well as fruit, with a hint of citrus, appearing in the form of mini dips. Of course, there is also sushi, the typical Japanese soup, and rice, all prepared in a special way. It’s so refined that you can feel each component in your mouth, while at the same time appreciating the overall flavor as a whole. The wine selection is fantastic, with a rich assortment of quality wines that support local producers and pair beautifully with the dishes. The dishes are served in a carefully chosen time sequence, in exquisite unique ceramics, which further enhances the entire experience. The portions may have been a bit much for me. Perhaps because I was a bit passive on this Sunday. Nevertheless, I enjoyed every bite and didn’t leave a single crumb. Of course, the quantity may vary depending on the individual. The whole experience was so rich, detailed, full of surprises and uniqueness that I ate slowly, savoring every moment, not wanting it to end too soon. We spent almost 3.5 hours in the restaurant, which flew by in an instant, as the experience was so rich. And that’s the real charm – it wasn’t just tasty, it was also an unforgettable experience. The price is 66 euros for an 8-course tasting experience. Based on previous experiences, considering what others offer for similar culinary experiences in Slovenia and Italy, the value of this offering is far superior, at least twice as much. Shin also has a restaurant in Ljubljana, where he offers shorter lunch menus, while in Kazlje, the experience is truly special and designed for more relaxed enjoyment. From what I’ve learned about Shin, he is a person with a tremendous sense for culinary art and a creative spirit – after all, he is also a painter. At the end of the meal, he came to us, open to any possible criticism, very receptive and constructive. He is incredibly passionate about his cuisine and truly wants to offer a complete experience. This is the true definition of a chef. This is the first time I’m writing so spontaneously and enthusiastically, even though it’s Japanese food in the Karst. But that’s irrelevant when you experience such perfection and heart in one package. I highly recommend this experience! The restaurant is only open on weekends.
