Struncatura (Linguine) with Anchovies

Struncatura is a pasta resembling linguine, made from flour residue and bran from wheat milling. It was pasta that was illegal to sell at one time due to the unhygienic origins of the sweepings of the mill waste. But today it is a culinary heritage and mainstream dish in restaurants as pasta factories use quality ingredients such as wholewheat flour and durum wheat. Ingredients

  • 250 gms of Struncatura or linguine pasta
  • 10 anchovy fillets
  • A handful of capers
  • 4 ripe cherry tomatoes, cut in two
  • 3-4 spoonfuls of breadcrumbs
  • 1 large clove of garlic, cursed and finely cut
  • Parsley stems

Step 1. Take a large pot of water and boil it over high heat. Put a frying pan over medium heat and add olive oil once hot. Add the chopped garlic and tomatoes facing the cut side of the pan. Cook the ingredients for 3-5 minutes.

Step 2. Add the anchovy fillets to the frying pan, and stir the frying pan ingredients so that the fillets fall apart. Cook for another 2-3 minutes and then turn off the heat. 

Step 3. Once the water is boiling in the pot, season with salt and add the pasta. Cook it until it is al dente. Keep some pasta water aside and drain the water from the pasta.

Step 4. Lastly, add the cooked pasta to the frying pan, and cook the mixture on medium heat, adding some pasta water if needed. After 2-3 minutes of cooking, add the breadcrumbs and capers to the dish and sauté for another 2 minutes. Garnish with parsley and serve.

Tip: Serve the dish with crostini bread and add 2 fillets of anchovy as garnish.
