Dublin is famous for its world-renowned pubs and cafes. Its local food culture mainly consists of hearty breakfasts and juicy stout-infused pies. As a global city, Dublin has incorporated many international dishes into its cafes and pubs. One of the items which Dubliners cook very well is a hearty barbeque, and who doesn't like a juicy, moist and smokey barbeque? One such delicacy to try is the Weber’s Cola BBQ ribs at Avoca Cafe, and the best part is: that you can recreate this dish in the comfort of your home with our guidance.

Cooking directions

Ingredients

  • For the Rib Rub:
  • 1 tbsp sea salt
  • 1 tbsp smoked paprika
  • 1 tbsp onion flakes/powder
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp celery seeds
  • 1 tsp ground black pepper
  • 2 racks of meaty baby back ribs (approx. 1.3kg)
  • 2 tbsp American mustard
  • For the Basting Mixture:
  • 85g unsalted butter
  • 2 tbsp cider vinegar
  • For the Cola Barbecue Sauce:
  • 240ml tomato ketchup
  • 240ml Cola
  • 3 tbsp cider vinegar
  • 2 tbsp treacle
  • 2 tbsp American mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp chili powder

Step 1. Using a blunt knife, slide the knife's edge under the membrane of the rib, loosen and lift the membrane off completely. Cut the ribs crosswise into two halves.

Step 2. Mix all the rub ingredients in a bowl and then apply generously to both ribs. Ensure the majority of the rub is coating the meatier side rather than the bone side of the ribs. Leave aside for 30 minutes to marinate.

Step 3. Prepare the barbecue grill to cook at a low heat of about 120°C, by adding wood chunks to the charcoal or wood chips in the smoker box. Once the smoke starts to rise, place the marinated ribs (bone side down) on the cooking grate to roast over indirect low heat. Close the barbeque lid and cook for about 90 minutes, while maintaining the temperature around 120-150°C.

Step 4. Mix all the Cola sauce ingredients in a saucepan, bring the mixture to a gentle boil and then simmer the mixture for 15 minutes. 

Step 5. After 90 minutes of cooking, baste the ribs with the melted cider vinegar butter and continue cooking for another 90 minutes. After 3 hours of cooking, generously baste the ribs with the Cola sauce and continue cooking at low heat for 15 minutes.

Step 6. The ribs are ready when the meat in the middle is tender and tears easily. Remove the ribs from the cooking grate and lightly baste with the Cola sauce. 

Tip:  Let the cooked ribs rest for 15 minutes before cutting into them, and serve with warm Cola sauce on the side.
