This is something between pizza and open pie, and the dish was prepared by the chef of the pizzeria UNO, Hayk Sewell, in 1943. As you might guess, this pizzeria was in Chicago. Later, Chicago-style pizza became one of the most popular types of pizza in the US. Chicago pizza is distinguished by a high bead and filling, necessarily containing a tomato sauce with oregano and basil and mozzarella and parmesan cheeses.
