The concept of the VIO restaurant is original and interesting: an unlimited buffet where you fill your bowl with the ingredients of your choice, which the cook then prepares to order. This gives the impression of a personalized and freshly cooked meal, which is very nice. However, one aspect left me perplexed: some of the food I had carefully chosen was removed from the bowl by the cook before preparing it. This creates a certain disappointment, because you don't necessarily find the quantity or ingredients you initially wanted. This gives the impression that the "freedom" offered by the buffet is in fact limited. For a restaurant that focuses on the idea of personalization, it completely misses the mark. I don't find that right towards customers, especially given the price. Honestly, I don't recommend it, unless you like paying a lot to have your portion reduced without explanation.
