To give 350 grams of clean cooked octopus without skin and tentacles we cooked and cleaned 1 octopus makes at least 1.4 kg because there is a weight loss of at least 50%. Price of fresh large octopus currently around €38/40/kg. Let's move on to the squid and prawn mix for frying. As you say, we "only" cleaned and cut at least 1.8 kg of fresh (and not frozen) squid which cost from €38 to €42 per kg. and believe me it takes time and a person to do this cleaning and cutting. Prawns only 10 in number... on this I can perhaps say that I made a mistake in counting them but for us the ratio is around 3/4 prawns per person compared to around 300g of squid per person to fry. On clams I would add that it is probably not updated on the prices which have increased by 40% in the last 2 years due to lack of availability of the product due to the blue crab which is destroying the fish market of all mussels. We use and prefer only Italian fish. If you can find clams at €10 per kg and octopus at €17 per kg. especially during the Christmas period, please give me the number of your supplier, one evening at dinner with the Ruffano Brothers, who I respect very much, while you eat the mixed fried food and I enjoy their delicious pizza.
