We stuff raw bacon and Clavadel mountain cheese into the best pork meat from the Dischma valley. The homemade Cordon Bleu gets breaded and gently fried in butter stock. The dish is served with a cream of peas, almonds and Bagna Cauda, a sauce made out of anchovies, olive oil, garlic and capers.

Special because of the minced meat that is made from Scottish highland beef that lives free range on the Duchli Range in and around Davos.
